Hot Dog Bake

Ingredients

- 1 cup onion, thinly sliced
- 1 tablespoon dark brown sugar
- 4 reduced-sodium hot dogs, cut into 1-inch pieces
- 3 cups mashed potatoes
- 1 cup sauerkraut, rinsed and drained
- 1 tablespoon coarse grain mustard
- 1/4 cup dry breadcrumbs
- 1 tablespoon margarine or 1 tablespoon butter, melted

Recipe
- 1 heat a skillet, spray with oil, use medium heat and cook the onion with the brown sugar, stirring for about 5 minutes.
- 2 add hot dogs and cook until they are brown (5 min).
- 3 remove from heat.
- 4 mix the mashed potatoes and the hot dog mix.
- 5 stir in the sauerkraut & mustard, add pepper.
- 6 spoon into a 1 quart casserole, sprinkle with bread crumbs, drizzle with the margarine/butter.
- 7 bake in 350°f oven until the casserole is heated through and golden, about 15-20 minutes.
