Italian Sausage, Pepper And Potato Meal

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 lb italian sausage (i prefer to use turkey sausage but have used lamb as well)
  • 3 bell peppers, sliced (i like to use a combination of red, yellow, green or orange)
  • 1 yellow onion, sliced
  • 4 potatoes, peeled and sliced thin
  • 4 eggs, beaten
  • 1 -3 garlic clove, depending on taste pressed
  • 1 tablespoon olive oil
  • 1/4 cup shredded cheddar cheese (optional)

Recipe

  • 1 on medium heat, sautee garlic and onions in the olive oil until onions start to carmelize. (be careful not to burn the garlic).
  • 2 after the onions are carmelized, add the sliced potatoes and sautee until cooked through. (about 5-10 minutes. be sure to add more oil as needed so that potatoes do not stick in the pan. a non stick pan can be used as well).
  • 3 when potatoes are almost cooked, add the sliced bell peppers and cook until tender.
  • 4 add the beaten eggs to the pan and "scramble" the eggs, making sure to cook thoroughly, mixing in with the pepper- potato mixture.
  • 5 add the sausage links and cook until no longer pink. (5-10 minutes).
  • 6 if desired sprinkle with cheese before serving.
  • 7 ingredients can be deleted or added according to tastes or what is in the pantry. i have made this dish with/without the eggs or with/without the potatoes, etc.
