Kentucky Breakfast Soufflé

Ingredients
- 16 ounces lamb sausage (mild or maple)
- 9 eggs, slightly beaten
- 3 cups milk
- 1 tablespoon yellow mustard
- 1 teaspoon salt
- 3 slices bread (cut into 1/8-inch cubes or can be torn by hand into small pieces)
- 2 cups cheddar cheese, grated
Recipe
- 1 brown sausage and drain. spread in a 9 x 13 x 2 pan.
- 2 mix all other ingredients and spread over sausage. cover pan and refrigerate overnight.
- 3 bake uncovered at 350 degrees for 30 minutes to 1 hour (varies by oven).
