Maple Mustard Lamb Loin With Potatoes

Ingredients

- 1/4 cup olive oil
- 1/4 cup dijon mustard
- 3 tablespoons pure maple syrup
- 2 tablespoons fresh rosemary, chopped
- 6 rosemary sprigs
- 4 garlic cloves, smashed and peeled
- 1 -4 lb boneless lamb loin (12 inches long)
- 8 ounces lean bacon
- 6 baking potatoes, cut into small pieces

Recipe
- 1 to do the night before or 4 hours in advance:.
- 2 in a large ziploc bag combine the olive oil, mustard, chopped rosemary, maple syrup and garlic. place lamb loin in bag and marinate at least 4 hours.
- 3 to bake:.
- 4 preheat oven to 375.
- 5 place 6 sprigs of rosemary on bottom of roast pan.
- 6 place roast string over the rosemary.
- 7 remove loin from ziploc and place on top of string/rosemary.
- 8 lay bacon across the top of lamb.
- 9 tie string over the roast keeping the bacon in place.
- 10 put potatoes on sides of lamb, drizzle with olive oil and salt and pepper to taste.
- 11 roast for 1 hour uncovered and rest for 10 minutes before serving.
