Meatloaf, The Way I Remember It.

Ingredients
- 1 large onion, minced
- 2 garlic cloves, finely chopped
- 2 tablespoons olive oil
- 1 lb ground lamb (lean)
- 1 lb ground beef (87 -90% lean)
- 1 3/4 cups breadcrumbs, unflavored
- 2 large eggs
- 1/2 cup 1% low-fat milk
- 1 teaspoon salt
- 3/4 teaspoon cracked black pepper
- 4 tablespoons ketchup
- 2 tablespoons dark brown sugar
- 4 tablespoons cider vinegar
- 4 tablespoons ketchup
Recipe
- 1 in a small skillet, heat olive oil to saute onions until slightly golden. then add the garlic and continue to saute for 1 to 2 minutes longer. cool slightly.
- 2 in a bowl combine the milk, eggs, salt, pepper, and ketchup mix well. add the bread crumbs, mix, add the beef, lamb, and onions mix well (hands work best). place into a loaf baking dish removing any air pockets.
- 3 in a small bowl mix the glaze ingredients and pour over the meatloaf.
- 4 bake in a 350 degree oven for 60 to 75 minutes.
- 5 remove when internal temperature is 155 degrees.
- 6 let stand 15 minutes prior to serving.
