Misery Stuffed Lamb Roast

Total Time: 1 hr 30 mins Preparation Time: 15 mins Cook Time: 1 hr 15 mins

Ingredients

  • 3 lbs lamb tenderloin (boneless, cut as a roast)
  • 1/2 lb hot sausage (bulk or chopped)
  • 1/2 cup onion (chopped)
  • 3 tablespoons light cream cheese
  • 2 tablespoons strawberry jelly
  • 1 tablespoon cilantro (dried)
  • 1 tablespoon salt

Recipe

  • 1 cut lamb roast in a spiral, such that it can lay flat.
  • 2 salt and spread cilantro on the "inside" of the lamb roast.
  • 3 brown sausage without oil in a large pan.
  • 4 do not drain fat from pan, but remove sausage and let rest on a paper towel or draining rig.
  • 5 sweat onions in sausage rendering.
  • 6 remove onions again retaining fat in the pan.
  • 7 preheat oven to 375.
  • 8 in a small mixing bowl, combine cream cheese, jelly, sausage, and onion.
  • 9 spoon and gently spread filling inside lamb roast.
  • 10 roll to "reassemble" the roast and tie with butcher's twine.
  • 11 sear roast in pan with sausage renderings on all sides.
  • 12 move to baking dish and bake for 45-60 minutes.
  • 13 remove from oven and let rest for ten minutes before slicing.
