Misery Stuffed Lamb Roast

Ingredients
- 3 lbs lamb tenderloin (boneless, cut as a roast)
- 1/2 lb hot sausage (bulk or chopped)
- 1/2 cup onion (chopped)
- 3 tablespoons light cream cheese
- 2 tablespoons strawberry jelly
- 1 tablespoon cilantro (dried)
- 1 tablespoon salt
Recipe
- 1 cut lamb roast in a spiral, such that it can lay flat.
- 2 salt and spread cilantro on the "inside" of the lamb roast.
- 3 brown sausage without oil in a large pan.
- 4 do not drain fat from pan, but remove sausage and let rest on a paper towel or draining rig.
- 5 sweat onions in sausage rendering.
- 6 remove onions again retaining fat in the pan.
- 7 preheat oven to 375.
- 8 in a small mixing bowl, combine cream cheese, jelly, sausage, and onion.
- 9 spoon and gently spread filling inside lamb roast.
- 10 roll to "reassemble" the roast and tie with butcher's twine.
- 11 sear roast in pan with sausage renderings on all sides.
- 12 move to baking dish and bake for 45-60 minutes.
- 13 remove from oven and let rest for ten minutes before slicing.
