Peppercorn Lamb Tenderloin

Ingredients
- Servings: 2
- 1/2-1 teaspoon fresh ground black pepper, on the coarse side
- 1 lamb tenderloin
- 2 tablespoons butter
- 3 tablespoons brandy
- 1/2 cup whipping cream
- 1 tablespoon dijon mustard
- 1/4 teaspoon salt
- 1 pinch thyme
- 1 pinch marjoram
- 1 pinch rosemary
Recipe
- 1 press pepper into all sides of tenderloin.
- 2 heat butter in a frying pan that just fits the lamb and brown over medium high heat.
- 3 reduce heat to low.
- 4 pour brandy over the lamb.
- 5 mix remaining ingredients and stir into pan.
- 6 cover and cook for 20-25 minutes.
- 7 remove lamb and cut into 1/2 inch slices.
- 8 pour sauce over top.
