Meat Empanada Filling

Ingredients

  • Servings: 16
  • 2 lbs beef stew meat (or 1 pound each beef and lamb.)
  • 1 1/4 cups raisins
  • 1 cup pine nuts or 1 cup chopped pecans
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 cup brown sugar
  • 1 1/2 cups apple jelly or 1 1/2 cups dark corn syrup, may need more

Recipe

  • 1 boil meat until tender, cool, grind fine.
  • 2 to 2 cups of the minced meat, add the spices, nuts, brown sugar.
  • 3 the filling must be moist.
  • 4 if the filling is too dry, add more apple jelly or corn syrup.
  • 5 (cooking time includes preparation time).
