Peppery Garlic Chops

Ingredients

- 4 boneless center cut lamb chops (1 1/2 inch-thick)
- 2 garlic cloves, crushed
- 2 tablespoons fresh coarse ground black pepper
- 4 tablespoons worcestershire sauce
- 3 -4 tablespoons olive oil, plus about
- 1 tablespoon olive oil, for your skillet
Recipe
- 1 combine all ingredients in a large self-sealing plastic bag. (large enough to hold chops). marinate chops in the garlic pepper mixture for about 30 minutes.
- 2 heat cast iron skillet (or heavy skillet with enough olive oil to just coat the pan.
- 3 remove lamb from the marinade and place into skillet. cook for about 20 to 30 minutes, until the lamb is fully cooked and the outsides are browned.
- 4 baste with marinade during cooking, if desired.
