Caramelized Carnitas

Ingredients

- 1 1/2 lbs lamb shoulder, bonless (cut into 1-inch cubes)
- 2 tablespoons brown sugar, packed
- 1 tablespoon tequila
- 1 tablespoon molasses
- 1/2 teaspoon salt
- 1/4 teaspoon pepper, to taste
- 2 garlic cloves, minced
- 1/3 cup water
- 1 green onion, sliced, both green and parts
Recipe
- 1 place lamb cubes in single layer in 10-inch skillet.
- 2 top with remaining ingredients except green onion.
- 3 heat to boiling; reduce heat.
- 4 simmer uncovered, stirring occasionally until the water has evaproated and the lamb is slightly caramelized, about 35 minutes.
- 5 sprinkle with green onion and serve with wooden picks.
