Caramelized Carnitas

Total Time: 50 mins Preparation Time: 15 mins Cook Time: 35 mins

Ingredients

  • Servings: 10
  • 1 1/2 lbs lamb shoulder, bonless (cut into 1-inch cubes)
  • 2 tablespoons brown sugar, packed
  • 1 tablespoon tequila
  • 1 tablespoon molasses
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper, to taste
  • 2 garlic cloves, minced
  • 1/3 cup water
  • 1 green onion, sliced, both green and parts

Recipe

  • 1 place lamb cubes in single layer in 10-inch skillet.
  • 2 top with remaining ingredients except green onion.
  • 3 heat to boiling; reduce heat.
  • 4 simmer uncovered, stirring occasionally until the water has evaproated and the lamb is slightly caramelized, about 35 minutes.
  • 5 sprinkle with green onion and serve with wooden picks.
