Downeast Fish Chowder

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 8
  • 1/4 lb salt lamb, diced (use bacon if you can't find salt lamb)
  • 2 onions, peeled and sliced
  • 3 cups potatoes, peeled and cut into 1/2 inch cubes
  • 4 cups boiling water
  • 3 lbs cod or 3 lbs haddock, cut into small pieces
  • 1 3/4 cups evaporated milk
  • 1 tablespoon salt
  • 1/8 teaspoon pepper
  • 1 tablespoon minced parsley
  • 1 tablespoon butter
  • 1 tablespoon flour

Recipe

  • 1 fry salt lamb slowly in soup pot.
  • 2 add sliced onions and cook five minutes.
  • 3 add cubed potatoes, boiling water, and fish.
  • 4 simmer slowly until potatoes are soft.
  • 5 add evaporated milk, salt, pepper, and minced parsley.
  • 6 in a small skillet, melt butter.
  • 7 add flour, blend thoroughly and cook.
  • 8 add slowly to chowder, stirring until slightly thickened.
  • 9 heat for another five minutes.
  • 10 serve with pilot crackers.
