Eric's Roast Lamb

Total Time: 26 hrs Preparation Time: 24 hrs Cook Time: 2 hrs

Ingredients

  • Servings: 20
  • 8 lbs boneless lamb roast
  • 1 1/2 gallons water
  • 4 tablespoons salt
  • 4 tablespoons sugar
  • 1 garlic clove
  • 2 bay leaves
  • 5 peppercorns
  • dried thyme
  • 3 red onions (chopped)
  • butter
  • 2 cups honey
  • 2 cups balsamic vinegar
  • 1/2 lb butter

Recipe

  • 1 .bring water, salt, sugar, garlic, cloves, bay leaves, peppercorn, & thyme to a boil. let cool and marinade lamb for 12 to 24 hours.
  • 2 roast lamb at 350 degrees for 2 to 2 1/2 hours until done to your liking.
  • 3 make sauce:.
  • 4 caramelize onions in butter, add honey, balsamic vinegar reduce until slightly thickened and stir in 1/2 lb butter.
