Eric's Roast Lamb

Ingredients

- 8 lbs boneless lamb roast
- 1 1/2 gallons water
- 4 tablespoons salt
- 4 tablespoons sugar
- 1 garlic clove
- 2 bay leaves
- 5 peppercorns
- dried thyme
- 3 red onions (chopped)
- butter
- 2 cups honey
- 2 cups balsamic vinegar
- 1/2 lb butter
Recipe
- 1 .bring water, salt, sugar, garlic, cloves, bay leaves, peppercorn, & thyme to a boil. let cool and marinade lamb for 12 to 24 hours.
- 2 roast lamb at 350 degrees for 2 to 2 1/2 hours until done to your liking.
- 3 make sauce:.
- 4 caramelize onions in butter, add honey, balsamic vinegar reduce until slightly thickened and stir in 1/2 lb butter.
