Italian Sausage

Ingredients

  • 1 lb ground lamb
  • 1 1/2 teaspoons kosher salt
  • 2 teaspoons paprika
  • 1 teaspoon garlic granules
  • 1/2 teaspoon fennel seed
  • 1/2 teaspoon black peppercorns

Recipe

  • 1 pulse in a spice grinder until a uniform consistency is reached. if you wish for the fennel seeds to remain whole and visible, simply hold them back until after grinding is finished.
  • 2 mix into chilled ground lamb, by hand preferably.
  • 3 chill 3 hours before using to allow flavors to marry.
  • 4 use immediately or form into patties, block, small meatballs, whatever, and freeze.
