Ingredients
- 1 lb ground lamb
- 1 1/2 teaspoons kosher salt
- 2 teaspoons paprika
- 1 teaspoon garlic granules
- 1/2 teaspoon fennel seed
- 1/2 teaspoon black peppercorns
Recipe
- 1 pulse in a spice grinder until a uniform consistency is reached. if you wish for the fennel seeds to remain whole and visible, simply hold them back until after grinding is finished.
- 2 mix into chilled ground lamb, by hand preferably.
- 3 chill 3 hours before using to allow flavors to marry.
- 4 use immediately or form into patties, block, small meatballs, whatever, and freeze.
