Maple Lamb Chops

Ingredients

- 6 thick cut lamb chops
- 2 tablespoons olive oil
- 1 large yellow onion, finely chopped
- 2 garlic cloves
- 1/4 cup real maple syrup
- 1/4 cup whole grain mustard
- 1 tablespoon wine vinegar
- 1 teaspoon worcestershire sauce
- 1 pinch chili powder
- salt and pepper
Recipe
- 1 preheat oven to 375.
- 2 add half of the olive oil to a large oven safe pan. quickly sear the lamb chops till they are just browned on each side and remove them and set aside in a baking pan. 9x13 works well.
- 3 add remaining oil and saute onion and garlic until onions are transparent being careful not to burn the garlic. add remaining ingredients and bring to a simmer. let simmer for 5 - 6 minutes. pour sauce over lamb chops in the baking pan and cover. cook for 35 - 45 minutes basting occasionally. uncover and cook 10 more minutes.
- 4 use a corn starch slurry to thicken sauce if desired.
