Minted Lamb Chops

Ingredients

  • Servings: 4
  • 2 tablespoons olive oil
  • 2 tablespoons fresh mint, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon ground black pepper
  • 4 lamb loin chops (1-inch thick, about 4 to 5 ounces each)
  • mint leaf, for garnish

Recipe

  • 1 in a small bowl, combine oil, mint, garlic, salt, cumin, coriander, cayenne and black pepper. spread on both sides of each chop. set aside to marinate for 30 minutes at room temperature.
  • 2 preheat broiler to high. place chops under broiler and cook about 4 minutes per side, until nicely browned.
