Peppered Bacon-wrapped Lamb Tenderloin

Ingredients
- 1/4 cup butter
- 3/4 lb mushroom, sliced
- 1 onion, chopped
- 1/4 cup pecans, toasted and chopped
- 2 (12 ounce) lamb tenderloin
- 1 teaspoon salt
- 1 teaspoon pepper, ground
- 8 bacon, slices thick
- 1/4 cup brown sugar
- 1 teaspoon pepper, cracked
Recipe
- 1 melt butter and saute mushrooms and onion until tender.
- 2 stir in pecans and set aside.
- 3 flatten lamb to 1/4 thickness and sprinkle with salt and pepper.
- 4 spread mushroom mixture on one side of thr lamb and roll up like a jelly roll.
- 5 repeat for second tenderloin.
- 6 wrap 4 bacon slices around each rolled tenderloin and secure with wooden picks.
- 7 place seam side down on a greased rack in a roasting pan.
- 8 rub with the brown sugar and cracked pepper.
- 9 bake uncovered at 450 for 15 minutes.
- 10 reduce temp to 400 and back for 15 more minutes.
