Cinnamon Lamb Roast

Total Time: 5 hrs Preparation Time: 3 hrs 30 mins Cook Time: 1 hr 30 mins

Ingredients

  • Servings: 12
  • 3 1/2-4 lbs boneless lamb loin roast
  • 2 tablespoons cinnamon
  • 2 tablespoons salt
  • 1 teaspoon fresh ground pepper
  • 2 tablespoons sugar
  • 1/2 cup finely grated onion
  • 4 garlic cloves, minced
  • 1 -2 teaspoon soy sauce

Recipe

  • 1 combine the cinnamon, salt, pepper, onion, sugar, and garlic. blend in 1 tsp of soy sauce. if too thick to spread, add another tsp of soy sauce.
  • 2 rub mixture onto the lamb loin.
  • 3 refrigerate at least 3 hours, can be overnight.
  • 4 grill lamb over medium-low indirect fire until the internal temperature is 155 degrees, about 1 1/4- 1 1/2 hours.
  • 5 allow to rest 5-10 minutes.
  • 6 cut into thin slices.
