Cinnamon Lamb Roast

Ingredients
- Servings: 12
- 3 1/2-4 lbs boneless lamb loin roast
- 2 tablespoons cinnamon
- 2 tablespoons salt
- 1 teaspoon fresh ground pepper
- 2 tablespoons sugar
- 1/2 cup finely grated onion
- 4 garlic cloves, minced
- 1 -2 teaspoon soy sauce
Recipe
- 1 combine the cinnamon, salt, pepper, onion, sugar, and garlic. blend in 1 tsp of soy sauce. if too thick to spread, add another tsp of soy sauce.
- 2 rub mixture onto the lamb loin.
- 3 refrigerate at least 3 hours, can be overnight.
- 4 grill lamb over medium-low indirect fire until the internal temperature is 155 degrees, about 1 1/4- 1 1/2 hours.
- 5 allow to rest 5-10 minutes.
- 6 cut into thin slices.
