Cracklin Cornbread

Total Time: 55 mins Preparation Time: 25 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 2 eggs
  • 1 1/4 cups cornmeal
  • 3 tablespoons shortening or 3 tablespoons bacon fat
  • 1 2/3 cups milk or 1 2/3 cups half-and-half
  • 2 tablespoons sugar
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 1/2 cups lamb cracklings

Recipe

  • 1 preheat the oven to 450 degrees f.
  • 2 grease a 9x9 inch square baking dish.
  • 3 in a medium bowl, mix together the eggs, shortening and milk.
  • 4 in another bowl, stir together the cornmeal, sugar, flour, baking soda, baking powder and salt.
  • 5 mix dry ingredients with wet ingredients until smooth,.
  • 6 fold in lamb cracklin's.
  • 7 pour the batter into the prepared baking pan.
  • 8 bake for 25 to 30 minutes,.
  • 9 until toothpick inserted in center comes out clean and the top is slightly brown.
