Greek Lamb With Orzo

Total Time: 7 hrs 50 mins Preparation Time: 20 mins Cook Time: 7 hrs 30 mins

Ingredients

  • Servings: 6
  • 1 kg lamb shoulder, diced
  • 2 onions, sliced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cinnamon
  • 2 cinnamon sticks, broken in half
  • 2 tablespoons olive oil
  • 400 g chopped tomatoes
  • 500 ml hot chicken or 500 ml vegetable stock
  • 400 g orzo pasta
  • freshly grated parmesan cheese, to serve

Recipe

  • 1 brown the lamb in a non-stick frying pan then transfer to a slow cooker.
  • 2 heat the oil in the same pan and gently fry the onions until soft, add the oregano and cinnamon, stir then add to the slow cooker on a low temperature.
  • 3 add the cinnamon sticks, tomatoes and the stock to the slow cooker.
  • 4 cook for approximately 7 hours until the meat is tender.
  • 5 turn the heat to high, remove the cinnamon sticks and add the orzo.
  • 6 cook for approx 25 minutes until the orzo is cooked.
  • 7 sprinkle with parmesan and serve with crusty bread.
