Mini Egg & Bacon Pies

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • 12 eggs
  • 1/2 cup cream
  • 1/2 cup milk
  • 1/2 cup parmesan cheese, finely shredded
  • 4 slices bacon, chopped finely
  • 5 sheets puff pastry
  • salt
  • pepper
  • 2 tomatoes, sliced thinly (optional)

Recipe

  • 1 whisk together eggs, milk, cream, parmesan, salt, and pepper.
  • 2 cut 5 rounds out of each sheet of pastry, and use the rounds to line the holes of 2x12 large cup muffin pan.
  • 3 divide the chopped bacon between the pastry rounds.
  • 4 pour egg mixture over bacon, to almost at the top of the pastry.
  • 5 top each pie with a slice of tomato.
  • 6 bake for 20 minutes at 200°c.
