Mini Egg & Bacon Pies

Ingredients
- 12 eggs
- 1/2 cup cream
- 1/2 cup milk
- 1/2 cup parmesan cheese, finely shredded
- 4 slices bacon, chopped finely
- 5 sheets puff pastry
- salt
- pepper
- 2 tomatoes, sliced thinly (optional)
Recipe
- 1 whisk together eggs, milk, cream, parmesan, salt, and pepper.
- 2 cut 5 rounds out of each sheet of pastry, and use the rounds to line the holes of 2x12 large cup muffin pan.
- 3 divide the chopped bacon between the pastry rounds.
- 4 pour egg mixture over bacon, to almost at the top of the pastry.
- 5 top each pie with a slice of tomato.
- 6 bake for 20 minutes at 200°c.
