Chuck's Brined Lamb Roast

Ingredients
- Servings: 8
- 3 -4 lbs lamb loin roast
- 2/3 cup salt
- 1/3 cup sugar
- 2 bay leaves
- 1 teaspoon black pepper
- 1/4 cup wine
- 1/4 cup worcestershire sauce
- 2 teaspoons dry mustard
- 1 teaspoon celery seed
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
Recipe
- 1 place everything except roast in a sauce pan with 2 cups of water and bring to a boil.
- 2 simmer for 5 minutes, remove from heat and add ice to cool.
- 3 once cooled, place roast and mix in a large pot, add cold water to cover roast, cover pot and place in fridge for 24 to 48 hours.
- 4 remove roast, pat dry and cook roast in oven at 350 degrees for approximately 2 hours or until done.
