Chuck's Brined Lamb Roast

Total Time: 26 hrs Preparation Time: 24 hrs Cook Time: 2 hrs

Ingredients

  • Servings: 8
  • 3 -4 lbs lamb loin roast
  • 2/3 cup salt
  • 1/3 cup sugar
  • 2 bay leaves
  • 1 teaspoon black pepper
  • 1/4 cup wine
  • 1/4 cup worcestershire sauce
  • 2 teaspoons dry mustard
  • 1 teaspoon celery seed
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika

Recipe

  • 1 place everything except roast in a sauce pan with 2 cups of water and bring to a boil.
  • 2 simmer for 5 minutes, remove from heat and add ice to cool.
  • 3 once cooled, place roast and mix in a large pot, add cold water to cover roast, cover pot and place in fridge for 24 to 48 hours.
  • 4 remove roast, pat dry and cook roast in oven at 350 degrees for approximately 2 hours or until done.
