Lori's Grits With Tomatoes And Lamb

Ingredients

- 3 cups evaporated milk
- 1 cup water
- 3 tablespoons butter
- 2 teaspoons salt
- 1 cup grits
- 1/4 cup butter
- 3 lbs boneless lamb loin (cubed)
- 1/4 cup butter
- 1 onion (minced)
- 4 large garlic cloves (minced)
- 1/4 cup wine
- 4 bay leaves
- 1 (28 ounce) can chopped tomatoes (drained)
- salt
- fresh cracked pepper
- cayenne (to taste)
- 2 tablespoons oregano (minced)
- 2 tablespoons thyme leaves (minced)
- 2 tablespoons parmesan cheese (grated)
- 1/4 cup heavy cream
- parmesan cheese (grated, to taste)
Recipe
- 1 in a pot combine the milk, water, butter and salt. bring to a boil.
- 2 whisk in grits. reduce. simmer 20 minutes.
- 3 meanwhile, heat butter in a wok. brown lamb in batches. set aside.
- 4 heat butter in wok. add onion and garlic. saute 3 minutes.
- 5 return lamb and accumulated juices.
- 6 add wine. let evaporate.
- 7 stir in the bay leaves, tomatoes, salt, pepper and cayenne.
- 8 bring to a boil. reduce. simmer 10 minutes.
- 9 stir in the oregano and thyme.
- 10 to grits add the parmesan and cream.
- 11 ladel onto plates. top with lamb mix.
- 12 serve with more parmesan if desired.
