Mini Kofta Pittas

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 10
  • 600 g ground lamb
  • 1 garlic clove
  • 1 teaspoon cumin
  • 2 teaspoons coriander
  • oil
  • 10 pita breads
  • 200 g tzatziki
  • 3 lettuce leaves
  • 6 tomatoes

Recipe

  • 1 preheat the oven to 190c/170c fan/gas 5. mix the lamb with the garlic, cumin, and coriander - it's easiest to use your hands. season to taste.
  • 2 shape into 20 small oval balls. lightly grease a baking tray with the sunflower oil. put the koftas on the tray, leaving a gap between each one, and cook in the oven for 15 minutes. cool. keep in the fridge until ready to pack.
  • 3 just before you pack the picnic, carefully open out the mini pitta breads to make pockets. put 2tsp tzatziki, 2 koftas, and some lettuce and tomato into each one.
  • 4 pack the rest of the tzatziki in a small plastic container and serve with a selection of vegetable sticks.
