Mini Kofta Pittas

Ingredients

- 600 g ground lamb
- 1 garlic clove
- 1 teaspoon cumin
- 2 teaspoons coriander
- oil
- 10 pita breads
- 200 g tzatziki
- 3 lettuce leaves
- 6 tomatoes
Recipe
- 1 preheat the oven to 190c/170c fan/gas 5. mix the lamb with the garlic, cumin, and coriander - it's easiest to use your hands. season to taste.
- 2 shape into 20 small oval balls. lightly grease a baking tray with the sunflower oil. put the koftas on the tray, leaving a gap between each one, and cook in the oven for 15 minutes. cool. keep in the fridge until ready to pack.
- 3 just before you pack the picnic, carefully open out the mini pitta breads to make pockets. put 2tsp tzatziki, 2 koftas, and some lettuce and tomato into each one.
- 4 pack the rest of the tzatziki in a small plastic container and serve with a selection of vegetable sticks.
