Mooreton Deer Sausage

Total Time: 18 hrs Preparation Time: 18 hrs

Ingredients

  • 50 lbs venison
  • 50 lbs fatty lamb
  • 2 lbs tender quick
  • 6 ounces pepper
  • 1 ounce nutmeg
  • 8 ounces mustard seeds
  • 1 tablespoon garlic powder
  • 1 ounce ground marjoram

Recipe

  • 1 place 50/50 mixture onto grinder , sprinkle seasonings on meat, add slowly 2 cups of cold water and mix seasonings through meat evenly. perform 1st grind, add water as needed to incorporate seasonings. grind a second time with medium blade.
  • 2 stuff into lamb casings and smoke.
